Torrefied barley flakes consist of barley grains that have been treated at high temperatures. Their addition improves head retention and gives body to the final beer. The flavor of these barley flakes is slightly stronger than that of similar wheat flakes.

They do not need to be milled before being added to the mash. Furthermore, they retain their husk, making them a suitable alternative to wheat in recipes that already contain many huskless grains.
