Released in 2000 by Yakima Chief Ranches, the American variety Simcoe® has become extremely popular among craft brewers. Its high alpha percentage and low cohumulone content make it a very good base bittering hop. It also has good aroma properties. It is characterized by a pleasant fruity, but also earthy aroma of herbs and grapes.
Simcoe is sometimes called "Cascade on steroids."
