The essential yeast for barrel-aged whiskies and single malt whiskies. The famous Saccharomyces cerevisiae strain, ideally suited for Scotch and other grain and malt-based distilled beverages intended for barrel-aging. Ensures excellent congener formation, high alcohol tolerance (>15% ABV), and high attenuation, even without added enzymes – perfect for malt-based fermentation. Dosage: 50–80 g/hL. Rehydrate at 25–35°C before adding. Suitable for continuous fermentation systems.
