Saaz is one of the four original "Noble" hops, characterized by a distinctive and classic aroma. It is widely known for its use in numerous Bohemian lagers and pilsner brewers. Its warm, herbal character comes from its high farnesene content, while other oils are quite balanced.
With such a low alpha acid percentage, Saaz is undoubtedly an aroma hop, but when used for bittering, it provides a gentle bitterness. Additionally, increased polyphenol content helps reduce oxidation, meaning beer brewed with Saaz lasts longer.
