Lemon peel is a popular additive in beer, used to impart freshness, aroma, and a touch of tartness to the beverage. It is most commonly used in wheat beers (especially German-style Weissbier or Belgian-style Witbier), whose natural profile pairs well with citrus nuances.

Usage:

  • During fermentation: The peel can be added at the beginning or end of fermentation to allow the beer to absorb its essential oils. This provides a more complex citrus aroma and flavor.
  • Just before serving: The most popular method is to add a fresh lemon slice or peel to a beer glass just before drinking. This immediately releases the lemon aroma and slightly alters the beer's taste.
  • At the end of the boil: Lemon peel is usually added 5-10 minutes before the end of the boil. Typically, 10-30g/20L of beer is added.
