"Amarillo" is an aromatic hop that is typically used only at the end of the boil, including dry hopping.
Amarillo hops provide beer with a distinct floral, spicy, tropical, and citrus flavor and aroma.
Amarillo hops are characterized by solid bittering properties - 9-11% alpha acids. In addition, these hops have one of the highest myrcene oil contents of all hops (60-70% of total oils). Due to the extremely high myrcene content, the hops acquire a very sweet citrus flavor and aroma.
Amarillo hops are often paired with Citra, Simcoe, and Mosaic in many juicy IPAs and pale ales.
