Due to the concave bottom and central drainage hole, the wort circulating through the pump passes through the malt tube and then through the bottom of the boiler. Usually, the wort takes the path of least resistance, which is making a "b" line to that drainage hole.
This heat exchanger vessel forces the recirculating wort to rise to the edge of the BrewZilla base and pass through the elements for a longer period of time, helping to exchange heat with the wort faster, so you can reach the right temperature faster when brewing.
